Kefta tagine is a classic Moroccan staple that is easy and quick to make. The blend of zesty tomatoes with juicy kefta balls (spiced ground beef) is an irresistible and filling dish that will be loved by everyone.

Ground beef balls are included in a lot of international cuisines, and in the Moroccan kitchen, they are small and flavorful. The kefta is cooked in a thick tomato sauce, until it absorbs all the flavors, it is lightly seasoned with herbs and spices (ground cumin, ground ginger, paprika and chili powder- this remains optional if you don’t like your food to be spicy).

This dish is traditionally made in a tagine, but you can use whatever pan or pot is available to you. You can also replace ground beef with chicken, turkey or fish.

In this course, the dada will guide you with clear instructions to make the most delicious kefta tagine, the authentic way. Serve it with crusty bread, Khobz, and enjoy!

Ingredients
For the ground beef
1 small white onion
1 small garlic clove
Small bunch of parsley with a few cilantro branches
500g (1 lb) ground beef
1/2 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder (or to taste)
1 teaspoon ground black pepper
1 teaspoon ground ginger
1/4 teaspoon salt
2 tablespoons vegetable oil

For the tomato sauce
1 large ripe tomato
1/2 tablespoon tomato paste
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 teaspoon salt
3 tablespoons olive oil
2 tablespoons vegetable oil
3 tablespoons water

For decoration (optional)
Finely chopped parsley and cilantro

Steps
Step 1: Seasoning the ground beef
1- Peel the onion and rinse it, then roughly chop it.
2- Peel the garlic.
3- Coarsely chop the parsley and cilantro.
4- Place the onion, garlic, and herbs in a food processor, then blend until well combined.
5- Pour the blended mixture in a bowl.
6- Add the ground beef to the bowl.
7- Season with cumin, paprika, chili powder, pepper, ginger and salt, then mix to combine.

Step 2: Preparing the sauce
1- Cut the tomato in half, and remove its seeds.
2- Grate the tomato using the large holes of a grater.
3- Place the grated tomato in a pot.
4- Add the tomato paste, paprika, pepper, salt and chili powder.
5- Add the olive oil, vegetable oil, and water, then mix to combine.
6- Place the pot over medium heat. Cover and cook for 15 minutes.

Step 3: Preparing the tagine
1- Shape the ground beef into small-sized meatballs.
2- Add the kefta to the tomato sauce, then cook for 4 minutes or until the kefta is cooked through.

Step 4: Serving the tagine
1- Place the tagine in your serving plate or a tagine.
2- Decorate with parsley and cilantro, then serve with crusty bread.
