Recipe:
CHOCOLATE CHIP COOKIES

Ingredients
12 ounces Unsalted Butter
10 ounces Granulated Sugar
10 ounces Brown Sugar
0.25. ounces Salt

6 ounces Whole Eggs
2 teaspoons Vanilla Essence
2 ounces Water

1 pound 4 ounces All Purpose Flour
0.25. ounce Baking Soda
1 pound 4 ounces Chocolate Chips

Method

1. Scale ingredients accurately. Have all ingredients at room temperature.
2. Place the butter, sugar and salt in the mixing bowl. With the paddle attachment, cream these ingredients at low speed. For light cookies, cream until the mix is light and fluffy, in order to incorporate more air for leavening. For denser cookies, blend to a smooth paste, but do not cream until light.
3. Add the eggs, essence and water and blend in at low speed.
4. Sift in the flour and baking soda. Mix until just combined. Do not overmix, or gluten will develop.
5. Fold in the Chocolate Chips.
