Cheese Fondue Recipe. Rub a fondue pot with a cut garlic clove. Pour in 1 cup dry white wine and warm over low heat until steaming, not boiling. Toss 12 ounces shredded Gruyere and 12 ounces shredded Vacherin with 2 teaspoons cornstarch. Add cheese by handfuls, stirring constantly until smooth before adding more. Stir in 1 to 2 teaspoons lemon juice and 1 to 2 tablespoons kirsch if desired. Keep heat low and stir often. Serve with crusty bread cubes and optional boiled potatoes, pickles, and pearl onions.
