Dough for Katori:-
Take a bowl and add:
1 cup maida (all-purpose flour)
1 tbsp lightly heated oil
1 tbsp ajwain (carom seeds)
Salt to taste
Mix well. Add water as required and knead into a firm dough.
Cover and rest the dough for 15 minutes.

Green Chutney
Add to a mixer:-
1 small bowl green peas
6–7 green chillies
4–5 mint leaves
1 tbsp cumin seeds
½ tbsp curd
A little coriander leaves
Salt to taste
Half small glass of water
Grind to a smooth paste.Green chutney is ready.

Potato–Chickpea Mixture
Heat a little oil in a pan.
Add:-
Boiled potatoes (cut into small pieces)
Boiled chickpeas
Add:-
1 tbsp chilli flakes
1 tbsp cumin powder
Salt to taste
Mix well and lightly sauté. Switch off the flame.

Sweet Curd:-
Take curd in a bowl.
Add:-
Some sugar
A little salt
Whisk well until smooth.
---
Making the Katori:-
Make small balls from the dough and roll them into thin puris.
Grease a medium-size bowl with oil.
Stick the puri on the outer side of the bowl.
Deep fry on medium-low flame until golden and crispy.
Let it cool, then carefully remove the bowl.

Assembling the Katori Chaat
Now assemble the chaat:-
Fill the katori with potato–chickpea mixture
Add chopped onion, tomato, and cucumber
Pour whisked curd on top
Add chopped green chilli, green chutney, and tamarind chutney
Sprinkle cumin powder, red chilli powder, and a little salt
Add pomegranate seeds, chopped coriander, and nylon sev
