Soup curry is a local specialty from Sapporo, Hokkaido, made with a light, soup broth instead of a thick roux-based sauce.Slow-simmered chicken drumettes and lightly fried colorful vegetables come together in a fragrant broth made without wheat flour, enriched with tomatoes, kelp, consommé, oyster sauce, and butter.Rather than intense spiciness, it highlights aroma and umami—light yet deeply satisfying, especially when enjoyed with rice.
