Here's a recipe for Double Wali Roti (layered flatbread):
Ingredients:
2 cups whole wheat flour
1/2 teaspoon salt
1 tablespoon oil or ghee (clarified butter), plus more for layering
Water, as needed for kneading
Dry flour for dusting
Instructions:
1. Make the Dough: In a large bowl, combine whole wheat flour and salt. Add 1 tablespoon oil/ghee and mix well. Gradually add water and knead into a soft, smooth dough. Cover and let it rest for 15-20 minutes.
2. Divide and Roll: Divide the dough into equal-sized balls. Take one ball, dust it with dry flour, and roll it into a thin circle (like a chapati).
3. Layering: Spread a little oil/ghee evenly over the rolled circle. Sprinkle a tiny bit of dry flour over the oil.
4. Fold and Roll Again: Fold the circle in half, then fold it in half again to form a triangle or a square. Gently roll this folded dough again into a larger circle, about 6-7 inches in diameter.
5. Cook the Roti: Heat a tawa (griddle) over medium-high heat. Place the rolled roti on the hot tawa. When you see small bubbles forming on the surface, flip it.
6. Apply Oil: Apply a little oil or ghee on the cooked side and flip again. Apply oil on the other side. Press gently with a spatula and cook until both sides are golden brown and cooked through.
