75g salt
30g sugar
1 tsp caraway seed powder
1 tsp dried marjoram
1/2 tsp white pepper
1/4 tsp of ground nutmeg
a pinch of clove
sausage casing of choice

500g fatty pork, like neck
1 egg white
50g ice cubes
1 Tbsp seasoning
2 Tbsp cold water

50g concentrated tomato paste
40g apple sauce
1 tsp Worcestershire saucestershire
1 tsp balsamic
1/2 tsp salt
1 tsp sugar
1 tsp curry powder
50g water

2 tsp turmeric powder
1/2 tsp mustard seeds
1/2 tsp coriander seeds
1/2 tsp fennugreek seeds
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp salt
1/2 tsp sugar
