BUCKWHEAT PANCAKES :
1 cup buckwheat flour
1 cup soy milk (add more if too thick from the protein powder)
1 tsp cinnamon
1 tsp baking powder
1 scoop protein powder (I use vanilla or unflavored soy protein)
1 ripe banana, mashed
1 tsp pure vanilla extract
BLUEBERRY CHIA JAM:
for 1 cup of berries I usually use around 1 tbsp chia seeds & optional drizzle of agave syrup
SAUCE FOR THE OVEN BAKED POTATOES: USED THE SAME FOR THE "BROCCOLI PASTA BUT WITH TOFU
1/2 cup cashews
1/2 cup soy milk
1 tsp garlic powder
1 tsp smoked paprika
1/4 cup nutritional yeast
salt & pepper to taste
*for other recipes, I sometimes add a block of firm or silken tofu to increase protein but here I added tofu into the actual meal
Baked the potatoes with spices at 180C for around 20 minutes before topping with the handful of cherry tomatoes and block of cut tofu. Stirred in the cashew sauce and sprinkled on more nutritional yeast: bake for another 10-13 minutes
APPLE TOFU SALAD:
1 red apple
1 block firm tofu
handful fresh dill
1/3 cup plain yoghurt (use greek for higher protein)
1 tsp dijon mustard
1 tbsp nutritional yeast
1/2 lemon's juice
drizzle of optional agave syrup
salt & pepper to taste
