In this video, I shared pork lauya or laoya pork recipe in the style of sinigang or nilaga soup, both Filipino soup. Lauya in some part of the Philippines is cooked using pork ribs; in this recipe I used pork shanks (kukod). Laoya has similar flavor with nilaga (another Filipino stew) but with a hint of sourness. I used plenty of vegetables in this recipe but you can reduce it to only a few (use what is available).
Pork Laoya / Lauya Baboy Ingredients:
1 kg pork shank (kukod)
9 cups water
4 to 6 cloves garlic
1 medium onion
1 tbsp black pepper
2 bay leaves
3 stalks lemongrass (optional)
1 medium taro (gabi)
2 tbsp fish sauce
3 pcs kamias (optional)
1 medium chayote (sayote)
1 potato
sinigang mix or pork cube (optional)
3 pcs saba banana (semi-ripe)
2 green chili (siling panigang) (optional)
1/2 small cabbage
