For this month’s recipe we’re making cauliflower bites. The intention of this recipe is to make a quick and easy nutrient-dense side dish. Cauliflowers are in-season meaning you're getting fruits and vegetables picked at their peak ripeness, offering higher levels of vitamins, minerals, and antioxidants, better flavor, and lower costs due to abundance. They're high in Vitamin C, and Vitamin K. Vitamin C does wonders for the body, it’s well-known for contributing to a healthy immune system. Cauliflower provides vitamin K, which helps with blood clotting and bone health. Cauliflowers are a low-carb, non-starchy vegetable that fit well into healthy and diabetes-friendly meals. This recipe takes about 15 minutes to complete. If there are any
leftovers you can store in an air-tight container for 3-5 days in the fridge. To reheat, place in the oven for 5 minutes, or if an air fryer is available, reheat for 5 minutes and enjoy!
Ingredients:
● 1 medium cauliflower, cuts in florets
● ¾ Cup Parmesan cheese, grated
● 2 Tablespoons olive oil
● 2 teaspoons paprika
● 2 teaspoon dried oregano
● 2 teaspoons garlic powder
● ¼ teaspoon black pepper
