📝 Ingredients:
2 mandarins (separated, frozen)
1 cup frozen mango chunks
1/4 cup plant milk (cashew, almond, oat — your choice!)
👩🍳 Instructions:
Slice the mandarin skins just enough to peel them — these will be your “ice cream cups.”
Gently remove the fruit and separate the segments. Store the peels in the fridge.
Freeze the mandarin segments for a few hours or overnight.
Add frozen mandarin and mango to a food processor. Blend until crumbly.
Pour in the plant milk and blend again until smooth and creamy.
Spoon the soft-serve mixture into the mandarin cups.
Freeze until firm, then let them sit at room temp for about 30 minutes before serving.

💡 Tips:
– For an extra smooth texture, peel off the mandarin segment skins before freezing.
– If your mango isn’t super sweet, feel free to add a splash of maple syrup or other sweetener. A dash of vanilla also elevates the taste!
