Cooking beans from scratch is a BEAUTIFUL, brothy process that makes you feel warm all over. You can tailor the flavours to your liking - adding whatever herbs or aromatics you have to hand.
Ingredients
8 tbsp olive oil
250 g dried butter beans (½ pack)
1 onion, quartered lengthways
1 head of garlic, sliced widthways
8 sprigs of thyme
5 sprigs of rosemary
1.75 litres of veg or chicken stock
Parmesan rind (optional)
Topping suggestions:
Crispy breadcrumbs
Parmesan
Creme fraiche
Lemon zest
Method
1- Soak the beans overnight (min 12 hours) in 3 x the amount of water (750 ml). Drain +
rinse well with water before using.
2- For the broth, heat the olive oil in a deep, cast iron dish over a medium-low heat. Add the
onion + garlic cut-side down with a pinch of salt and cook for around 15 minutes until
caramelised + nicely browned. Stirring occasionally.
3- Add the herbs of choice + the beans and stir to coat in the oil.
4- Fill the dish with the stock and add the parmesan rind at this point, if using. Season
generously with salt. Bring to a boil then lower to a simmer and cook until the beans are soft
creamy, anytime between 1h 20 mins to 2 h.
5- Once ready to serve, remove the onion + garlic and spoon the brothy beans into bowls.
Add toppings of choice + finish with a drizzle of olive oil
