You can prepare this dough 1–2 days ahead and keep it in the fridge, then bake fresh, golden cheese swirls whenever you want. No complicated steps — just easy, stress-free baking.
This recipe uses my go-to soft dough (often called “magic dough”) that works beautifully for breads, rolls, and pastries. These swirls are filled with melty cheddar and mozzarella and finished with a lightly crunchy topping.
Ingredients:
Yeast activation:
• 100 mL lukewarm milk
• 1 tbsp sugar
• 2.5 tsp dry yeast
Dough:
• 250 mL buttermilk or yogurt
• 3 tbsp oil
• 2 tsp salt
• 1 egg
• 3.5 cups (≈450 g) all-purpose flour, or as needed
• 1 tsp baking powder
Toppings / filling:
• 150 g cheddar (50 g for topping, 100 g for filling)
• 100 g mozzarella
• ½ cup pumpkin seeds
• Milk for brushing
Baking:
• Preheat oven to 380 °F (≈193 °C)
• Bake 20–25 min, until golden
