For the Dough (आटे के लिए)
2 cups All-purpose flour (मैदा)
2 tbsp Semolina (सूजी / बारीक रवा)
1 tsp Carom seeds (अजवाइन)
¼ cup Ghee (घी)
Salt – to taste (नमक – स्वादानुसार)
Cold water – as required for kneading (ठंडा पानी – आटा गूँथने के लिए)

For the Filling (भरावन के लिए)
5–6 large Boiled potatoes, chopped (उबले आलू – कटे हुए)
3 tbsp Ghee (घी)
1 tsp Cumin seeds, coarsely powdered (जीरा – दरदरा पिसा हुआ)
1 tbsp Coriander seeds, coarsely powdered (धनिया के बीज – दरदरे पिसे हुए)
1 tbsp Fennel seeds, coarsely powdered (सौंफ – दरदरी पिसी हुई)
A pinch Hing (हींग)
4–5 Mint leaves, pasted (पुदीना पत्ता – पीसा हुआ)
1 tbsp Fresh ginger-garlic paste (अदरक-लहसुन पेस्ट)
1 cup Boiled green peas (उबले हरे मटर)
1 tsp Chaat masala (चाट मसाला)
2 tsp Dry mango powder (अमचूर पाउडर)
2 tsp Anardana powder (अनारदाना पाउडर)
½ tsp Black pepper powder (काली मिर्च पाउडर)
1 tsp Garam masala (गरम मसाला)
A pinch Sugar (चीनी – चुटकी भर)
1 tsp Kasuri methi (कसूरी मेथी)
½ cup Fresh coriander leaves (ताज़ा हरा धनिया – कटा हुआ)
Salt – to taste (नमक – स्वादानुसार)

Method
To prepare the dough, combine all the dry ingredients. Add ghee and cold water, then knead to form a medium-soft dough. Let the dough rest for half an hour.

-For the filling, heat ghee in a pan. Add the coarsely powdered cumin, coriander seeds, and fennel seeds.

-Add the ginger-garlic paste and hing, followed by all the powdered spices.

-Next, add the boiled potatoes and green peas, sugar, and salt. Mix everything thoroughly.

-Add the fresh coriander leaves and mix well. Let the filling cool completely.

-Take a portion of the dough and roll it out into a long sheet. Cut the sheet into two equal halves.

-Shape the dough halves into samosas and fill them with the prepared potato mixture.

-Heat oil and fry the samosas on medium heat until they are golden brown.

For Samosa Chaat (समोसा चाट के लिए)
Mini samosas (prepared above) (मिनी समोसे – तैयार किए हुए)
1 cup Boiled chickpeas (उबले चने)
1 tsp Chaat masala (चाट मसाला)
½ tsp Jeera powder (जीरा पाउडर)
½ tsp Amchur powder OR Lemon juice (अमचूर पाउडर / नींबू रस)
1 tsp Red chilli powder (लाल मिर्च पाउडर)
Salt – to taste (नमक – स्वादानुसार)
Sweet curd / yogurt (मीठा दही)
Sweet tamarind chutney (मीठी इमली की चटनी)
Green mint-coriander chutney (हरी पुदीना-धनिया की चटनी)
Salty namkeen mix (नमकीन मिक्स)
Chopped onions (कटा हुआ प्याज)
Besan sev (बेसन की सेव)
Pomegranate seeds (अनार के दाने)
Fresh coriander (ताज़ा हरा धनिया)

Method
-To prepare the chaat, break the mini samosas into a serving bowl.

-Top with boiled chickpeas and sprinkle with chaat masala, jeera powder, amchur powder, red chili powder, and salt.

-Add the sweet curd, sweet tamarind chutney, and green mint-coriander chutney.

-Garnish with namkeen, chopped onions, besan sev, fresh pomegranate seeds, and fresh coriander.
