Tomato-Free AIP Marry Me Chicken that's better than the original | Dairy-Free & Nightshade-Free

AIP Marry Me Chicken is my answer to the scroll-stopping viral chicken obsession. Every time I see a picture of the original, I can’t look away. Saucy chicken smothered in tomato, cream, and cheese – exactly the things I’m eliminating. But why shouldn’t we have a comforting, “cheesy,” saucy chicken on AIP? This one-pot (plus one blender) version makes sure all of us AIP foodies won’t feel left out, with carrots and parsnips simmered into a rich sauce, plus loads of basil, a little tanginess from coconut yogurt (that won’t make the final dish taste like coconut… you know that’s my pet peeve), and a sprinkle of nutritional yeast for that parmesan-ish finish. It’s a dairy-free and nightshade-free version of the modern comfort-food classic.
