Healthy Cookie Dough Blondies. With a my secret ingredient! Chickpeas!

I’ve been baking these gooey blondies for years, and my favorite stores has the cutest Easter candies to make them festive! DO NOT SLEEP ON THESE. They taste 1000% legit and are egg-free, dairy-free, and gluten-free, making them perfect if you have guests with allergies (I’m making them for my cousin this weekend!).
YOU’LL NEED
-¾ c old fashioned rolled oats (gluten free if needed)
-1 (15-oz) can low-sodium chickpeas, rinsed and drained
-¼ c creamy peanut butter
-2 T melted coconut oil
-1 T vanilla extract
-1 tsp maple extract (optional)
-½ c pure maple syrup
-¾ tsp ground cinnamon
-¾ tsp baking powder
-⅛ tsp baking soda
-½ tsp kosher salt
-½ c M&Ms, plus more for topping
-¼ c mini chocolate chips
Preheat your oven to 350°F and line an 8x8 or 9x9-in pan with parchment. Pulse the oats in a food processor until finely ground. Add the chickpeas, peanut butter, coconut oil, vanilla, and maple extract. Blend until very smooth. Add the maple syrup, cinnamon, baking powder, baking soda, and salt, then blend again. Let cool slightly, then stir in the M&Ms and chocolate chips.
Spread the thick batter into the pan, smooth the top, and sprinkle with extra M&Ms. Bake for 18 minutes, until just set at the edges and a toothpick comes out clean. Let cool completely before slicing (they’re even better the next day!).
