With the hype of the keto and low carb diets, it sounds like starch, which is nothing but long chains of carbohydrates, would be just about the most fattening and inflaming food we could eat.
But is that really true or is it all marketing hype?
When it comes down to it, many people have very differing experiences with starches and carbohydrates, and a big reason for that has to do with a person's individual glucose sensitivity, based on the levels of certain stress hormones within their bodies.
Particularly, high adrenaline causes high free fatty acids in the blood, which suppresses the use of glucose. This inability to metabolize glucose properly is what leads to such negative side effects from eating those foods.
But going on a low carb diet is really just avoiding the problem, not solving it. To solve the problem, you need to fix your glucose metabolism, and since low carb diets actually worsen glucose metabolism through their activation of high amounts of adrenaline and cortisol, cutting out carbs only makes the problem worse.
