Hello everyone! In this video, I'm experimenting with something new — I'm making a Neapolitan pizza dough using a sourdough biga. It has 75% hydration, and this is my first time trying this method. The result is pretty amazing! The pizza turned out great, with a beautiful crust structure. It's light, airy, and just like biting into a cloud.
Below are the ingredients needed to make this amazing pizza:
(Sourdough Biga)
High protein flour - 200 gr
Water - 100 ml
Active sourdough starter - 100 gr
(Pizza dough)
All the poolish
High protein flour - 300 gr
Water - 275 ml or (250ml for 70% hydration) and (225ml for 65% hydration)
Salt - 14gr
