Although quiche is known to most as a French dish, this one is full of Italian flavours and it’s the perfect make-ahead dish for a gathering or for dinner in the garden. It’s bursting with spring flavors like roasted tomatoes, leeks, mushrooms, parsley and cheese. It’s really quick to make and will guarantee a satisfied crowd.

*for a 10 inch (26cm) baking pan
● Shortcrust
2 ⅓ cups (250g) pastry flour
1 tsp (5g) salt
½ cup (125g) cold butter
one large egg (60g)
4 tsp (20g) cold water
extra butter for greasing
● Roasted Tomatoes
1 ½ cup (300g) halved cherry tomatoes
garlic cloves
salt & pepper
thyme
2 tbsp (30g) olive oil
● Filling
3 medium eggs (150g)
⅘ cup (200g) cream
salt & pepper
nutmeg
1 ⅓ cup (200g) sautéed leeks
1 cup (150g) sautéed mushrooms
roasted tomatoes
⅔ cup (15g) cup parsley
1 cup (100g) grated cheese
● Steps:
1. Preheat the oven to 325 °F (170°C).
2. Using the flat beater, mix the sifted flour, salt and butter, until you get a sand-like texture. Add the water and egg and mix for 10 seconds. Refrigerate for 20 minutes.
3. Roll the dough to 3mm thickness. Line the tart tin with the shortcrust, pinch it, use heat resistant plastic wrap or parchment paper, add rice or pie weights and refrigerate for 20 minutes.
4. Bake for 20 minutes, remove the rice and bake for another 15 minutes or until golden.
5. For the Roasted Tomatoes, mix all the ingredients and bake at 400 °F (200°C) for 20-25 minutes.
6. For the filling, mix all the ingredients, pour the mixture into the shortcrust shell and bake at 325 °F (170°C) for 35-40 minutes.
● Tips:
1. I recommend greasing the baking pan and then line it with parchment paper.
2. Don’t overmix the dough. The idea is not developing the gluten.
3. To avoid sogginess, brush the shortcrust with one egg yolk + 2 tbsp (30g) cream and put it back in the oven for 5 minutes.
4. If possible, bake your quiche with the fan mode on, but lower the temperature to 160°C after the first 15 minutes.
