►Ingredients

►For the Peri Peri Chicken Burger and Peri Peri Marinade

3 large chicken breast (1.3kg or 2.8lbs)
Slice in half and cut into fillets
2 tsp black pepper

Buns
Lettuce
Tomatoes
Onions

►Peri Peri Marinade

1 small red onion
7 medium garlic cloves
8 red birds eye chilies
3 - 4 green birds eye chilies
1 large lemon
2 serrano chilies
1 tbsp tomato paste
1.5 tbsp smoked paprika
1 tbsp oregano
2 tsp rosemary
2 tsp sugar
2 tsp salt
1/4 cup vinegar
1/4 cup water
7 tbsp sunflower oil

►Quick Peri Peri Mayonnaise

1/2 cup mayonnaise
1/2 tsp black pepper
3 - 4 tbsp of peri peri marinade
2 tsp mixed dried herbs

►Spicy Fries

50g butter
2 tbsp oil
1 red onion
2 garlic cloves
1 tomato
100g cheddar cheese (mild or strong, what you like?)
100g american cheese slices
1 tbsp fajita spice (use more if you like)
Salt to taste
1 and half cup or 400g evaporated milk
Jalapenos as required
Fries as required


►Mocktail

30ml lemon juice
15ml lime juice
5 mint leaves
