Hello everyone, today I will be sharing my recipe and technique to make summer rolls. Summer rolls are predominantly a Vietnamese dish and is often made with fresh ingredients such as
Cucumber
carrots
beetroot (cooked)
capsicum
mushrooms
and greens like lettuce and spinach
Herbs like mint and coriander
And for protein, usually shrimps are used, but in my vegan recipe, the shrimps are replaced by fried Tofu (soya paneer)
for carbohydrates, usually rice noodles are used, in my recipe I have used locally available rice vermicelli, if neither, you can just use plain rice.
All of these are neatly wrapped inside a rice paper and eaten with your preferred sauces.
all the ingredients are cut in a stick manner, so its easy to roll, you can experiment with other shapes and sizes as well.
its important to note that I have used the rice paper which is usually used in spring rolls (deep fried), and they are usually thicker. Since I am not a professionally, I used this to avoid and tears in the paper. Also this was readily available in amazon.
For sauces, I have used two recipe, one with peanut butter with soya sauce and some coconut (blend them all together) and the other with peanut butter, coconut, and sesame paste (again blend them all together)
Overall I share with you my tasty and healthy summer roll recipe which is also a balanced meal with all the necessary nutritions and protein along with carbs to fill you up.
