Liberian Pepper Soup - Most Delicious Soup On The Continent. Today November 4, is Thanksgiving in Liberia. For those of you that are not familiar with Liberia, Liberia is located in West Africa and today I am sharing with You the famous Liberian Pepper Soup. It is the most delicious soup on the continent of Africa and most will agree, that it is one of the best soups around the world.

Equally tasty with its own unique flavors, it is cooked with various types of meats, poultry, seafoods, seasonings and spices, African vegetables and most importantly with the “HOTTEST PEPPERS”. All cooked in one pot or in many variations depending on your preference without combining the meats, seafoods and poultry, this delightful and intensely flavored soup is commonly eaten with Fufu, Dumboy, Rice or alone. Fufu and Dumboy are made from the Cassava root also known as Yucca.

In comparison with chicken soup, Liberian Pepper Soup is also known as the all illness curing soup. In my opinion and from experience it gives the immune system a boost and can help stave off cold and flu; the various spices and flavors also helps to break up congestion.

Why Not Gave It A Try? YOU CAN DO IT!!!

INGREDIENTS
Crabs(Dugenese, Blue, Snow, Jonah), or choice
Fresh Fish(Croaker and Tilapia), or choice
Pre-cut Oxtails, if desired
1 Large Onion
7 Habanero Peppers or choice
Shrimp, smoked/dried and fresh, if desired
Crawfish, fresh or smoked, if desired
Achatina Achatina Snails, smoked/dried, if desired
Pre-cut Hard Chicken, smoked/dried assorted pcs., if desired
4 Pcs Salty Pig Feet or choice
Assorted smoked/dried Fish, if desired
Pre-cut Cow Foot, if desired
Cow/Meat Skin, if desired
Stockfish Steak, Norwegian Style, if desired
Knorr Seasonings, Beef, Chicken and Tomato, or choice
3 Maggie Beef Bouillon Cubes or choice
Black Pepper
6 oz. Tomato Paste
Kittley and Bitterballs (African Vegetables)
Water
Okra

**Specialty ingredients can be purchased at local Liberian, African Markets, Meat/Seafood Markets, Specialty food stores within your area.

EQUIPMENT:
8 qt Cast Iron, 20 qt Stock pot, 2. 5 qt. pot
Prep Bowls
Cooking/Basting Spoon
Cutting Board
Paring Knife
Butcher Knife
Paper Towel
Cooking Gloves
Teaspoon

STEPS-YOU CAN DO IT:
1. Clean, rinse meats and seafood in cold water.
2. Cut meats into desired pieces, if not pre-cut.
3. Place the harder to cook meats -oxtails and cow foot in the pot.
4. Add the various Knorr and Liberian seasonings or choice, onions, 3 habanera peppers and add water in the pot and bring to boil on high for 1hr. 15 minutes until meat is partially tender.
5. Bring to boil the salty pig feet in a separate pot on high heat for 1 hour until the skin is tender.
6. In a prep bowl, soak the Norwegian Stock Fish in boiling water for 15 minutes; discard the hot water, replace with cold water and rinse as needed.
7. Settle Stock Fish for 5 minutes and begin taking apart with hands or knife into desired pieces and rinse in cold water.
8. Add the cow/meat skin to the prep bowl.
9. Remove the pig feet from boiling, discard the hot water, add cold water and replace several times as desired to rinse the salt residue and to cool off.
10. Add again cold water to the pot and begin cutting/tearing apart the pig feet by hand or knife to desired pieces and place in prep bowl along with the remainder onions and remainder habanera peppers.
11. Add the ingredients of the prep bowl to the boiling soup pot of meats and additional water to your liking and boil for another hour.
12. Add additional water to your liking, various seafoods with the exception of the fresh fish.
13. Add additional seasonings-knorr, maggi boullion beef cubes, Liberian seasoning, and black pepper to your taste or choice and gave it a full stir.
14. Add tomato paste, gave another stir, cover the pot, boil at medium heat for another hour and monitor throughout.
15. Boil okra separate to serve with soup.
16. After 15 minutes, add pieces of fresh fish, kittley and bitterballs to your liking and simmer for 30 minutes until soup is ready to be served. Discard any oil residue at the top of the soup if desired prior to serving.
