Oyakodon (serves 2)
1/2 cup (120ml) water
1 teaspoon (5g) dashi powder
2 tablespoon (30ml) Soy sauce
2 tablespoon (30ml) Mirin
2 teaspoon (10g) Sugar
1/2 small onion, sliced
2 boneless chicken thigh, cut into bite-sized pieces
3 eggs, beaten
Steamed rice, for serving
Green onions, for serving
Roasted seaweed, cut into strips, for serving
1. In a medium sized pan, add water, dash powder, soy sauce, mirin and sugar. Turn the burner on to medium heat, and bring the liquids to a simmer
2. Once simmering, add onions and chicken, and cook for 6 minutes total, flipping the chicken halfway through.
3. While waiting, place steamed rice into two serving bowls (recipe serves 2)
4. After 6 minutes, turn the heat to low and add half of the beaten egg. Cover with a lid and cook for 1min30s or until the egg is set. Remove the lid and add the rest of the egg and cook the egg to your preference.
5. Serve immediately by sliding half a portion on top of each of the rice bowls. Garnish with green onions and seaweed strips
