Finally learned how to make my all-time favourite Jinhua Ham Mooncake! ✨
My mom told me that when she was younger, a box of these mooncakes cost just around RM20 — and now the price is shocking!
So I took this chance to learn her secret family recipe and I’m excited to share it with all of you.

(面团 Dough)
🔹食用油 Cooking Oil (100g)
🔹糖青 Golden Syrup (270g)
🔹碱水 Alkaline Water (15ml)
🔹面粉 Plain Flour (380g)
(内陷 Filling)
🔹核桃 Walnut (350g)
🔹杏仁 Almond (450g)
🔹瓜子 Melon Seeds (180g)
🔹白芝麻 White Sesame Seeds (350g)
🔹金桔 Kumquat (180g)
🔹桔饼 Candied Tangerine Peel (180g)
🔹冬瓜条 Candied Melon (180g)
🔹云腿 Yunnan Ham (1)
🔹糕粉 Cooked Glutinous Rice Flour (120g)
🔹炸葱油 Fried Shallot Oil (2 tbsp)
🔹疯柑叶 Kaffir Lime Leaves (20-30)
🔹玫瑰糖 Rose Sugar Syrup (50g)
🔹玫瑰露 Rose Wine (2-3 tbsp)
🔹绍兴酒 Shaoxing Wine (2 tbsp)
🔹烈酒 Liqour (2-3 tbsp)
🔹麻油 Sesame Oil (2 tbsp)
🔹适量盐 Salt to taste
🔹清水 Water (130ml)
🔹麦芽糖 Maltose (2 tbsp)
这个配方大约可以制作 18~19 个月饼,每个馅料约 116 克,饼皮 40 克,总重约 156 克。可根据自家的月饼模具大小适当调整比例。
This recipe yields approximately 18 to 19 mooncakes. Each mooncake contains about 116g of filling and 40g of dough, for a total weight of around 156g. You can adjust the proportions according to the size of your mooncake mold.
