Tis the season to be jolly as we celebrate the birth of Baby Jesus - our reason for Christmas!
SIO-TSE MISUA or the traditional BIRTHDAY MISUA, is our Chinese way of celebrating birthday occasions, served to the celebrant for breakfast as a symbol of luck, prosperity and long life.
Enjoy the bursting of flavors from the different toppings that complements each other very well, together with our birthday noodles. Forgetting to add any one of the basic toppings will be surely missed if not totally complete.
I. the day before - we prepare some toppings.
we cook our meat toppings and save the
1) broth
2) slice liempo 500g
3) shred chicken breast - 1pc
4) soak n slice thinly - dried mushrooms
5) make fried crispy shallots
6) slice thinly chinese chorizo
7) bought adobong mani - fried peanuts w/ skin in garlic
II. keep in individual containers. store in ref.
III. next day we prepare more toppings
8) finely chopped chives
9) fried scrambled eggs as thin as possible
10) carefully separate noodles
optional toppings
11) shrimps as garnish
12) thinly sliced pork liver
13) hardboiled eggs specially for the celebrant for good luck
IV. carefully separate the noodles
V. start heating the broth
VI. slightly fry and render fats of chorizos
VII. stir-fry liempo, chicken & mushrooms, add 2 to 3 tbsp soy sauce for color n flavor
VIII. Prepare 2 woks.
1- with boiling water to cook noodles.
2- with soup broth, some chives, toasted shallots, 1 tsp rice wine, oil, salt n pepper to taste
IX. Add noodles in boiling water until soft then transfer immediately to wok with broth
X. Assemble noodles with preferred toppings.
