One Pot Chicken Thighs & Potatoes in the Instant Pot Whisper Quiet

Today I'm making a beginner friendly, super EASY One Pot Chicken Thighs and Potato dish in the Instant Pot. I'm testing the Instant Pot Duo Plus Whisper Quiet at the moment so I make it in there but you can make this in any Instant Pot using the pressure cook function. This dish is a real staple for us and you can vary up the ingredients to your liking. It's so good to have one-pot dishes like this to lean on in those tough weeks and this one never fails me! I hope you like it.

🥔 INGREDIENTS:
1 tbsp olive oil
1 large onion
3-4 chicken thighs on the bone, skin removed
6-8 potatoes
4 chopped tomatoes (to your taste)
1 tbsp grain mustard
1-2 tbsp honey to your taste
juice and zest of 1 lemon
1 tsp herbes de Provence
2 tsp Ottolenghi citrus and spice rub (optional)
1 cup frozen peas
1 cup stock (I used water but stock is better if you have it)

*Settings: 12 minutes on pressure cook high
