Plum Crumble Cake
INGREDIENTS (for a 22–25 cm pan):
• Butter (room temperature) – 100 g
• Sour cream (or plain Greek yogurt) – 150 g
• Sugar – 150 g
• Eggs (room temperature) – 3
• All-purpose flour – 200 g
• Baking powder – 1 tsp (about 6 g)
• Salt – 1/3 tsp
• Vanilla sugar – 1 tsp
For the crumble (streusel):
• Cold butter – 30 g
• Sugar – 30 g
• Flour – 50 g
Plums – 5–6
Ground cinnamon – to taste
INSTRUCTIONS:
In a bowl, whisk together the eggs, salt, and sugar. Add the softened butter, mix well, then add the sour cream. Sift in the flour, baking powder, and vanilla sugar. Gently mix until combined.
Grease your baking pan and pour in the batter. Cut the plums in half, remove the pits, and place the halves on top of the batter (you can place some cut side up).
Now make the crumble: mix cold butter, sugar, and flour with your hands until it forms coarse crumbs. Sprinkle the crumble over the plums and batter.
Bake in a preheated oven at 180°C (350°F) for about 25–30 minutes, until golden on top.
