Eggplant and Semi-Dried Young Sardine Tsukudani [Eng Sub]

This is a dish consisting of some sliced eggplants and semi-dried young sardines boiled down in soy sauce, bonito broth, sweet cooking rice wine and sugar. It goes well with cooked rice.
Ingredients:
Makes 1 dish (Approx. 15 cm/5.91 in in diameter).
• Eggplants - 330 g/11.64 oz
• Ginger - 40 g/1.41 oz
• Chirimen jako/semi-dried young sardines - 30 g/1.06 oz
• Sesame oil - some
• Sudaki to/light brown sugar - 2 Tbsp Note: Sudaki to (素焚糖) is an unrefined 100% cane sugar from the Amami Islands of Japan.
• Shiro dashi/bonito broth - 1 Tbsp
• Hon mirin/sweet cooking rice wine - 2 Tbsp
• 40% less sodium soy sauce - 1 1/2 Tbsp
• Balsamic vinegar - 1 tsp
• Kezuri ko/dried sardine and mackerel powder - 1 1/2 Tbsp
• Ground white sesame - 1 Tbsp
• Mi zansho/green Japanese peppercorns - as needed Note: You can use ko sansho/Japanese pepper powder instead.
[1 Tbsp = 15 mL/0.51 fl oz (US)/0.53 fl oz (UK)]
[1 tsp = 5 mL/0.17 fl oz (US)/0.18 fl oz (UK)]
Note: Store in a sealed container in the fridge for up to a week.
