金沙龍蝦膏炒龍蝦球
龍蝦1隻

鹹蛋黃1隻
做法:
1)首先把龍蝦頭及身分開,準備一煲滖水加2茶匙鹽,然後把頭放入滾水烚6分鐘。
2) 把龍蝦身兩側剪開,用匙羹附助把龍蝦拆肉, 然後取出中間的腸,把龍蝦肉放在凍的熟水內保持新鮮。
3) 把已拾好的龍蝦頭取出。
4) 鹹蛋黃隔水蒸8分鐘,蒸熟後用叉把鹹蛋黃壓碎。
5)把龍蝦頭內的膏刮出待用。
6) 龍蝦肉用廚房紙巾吸乾水份,把剩餘的龍蝦腳撕走然後切件。
7)把龍蝦身和尾部的殻剪開以方便上碟時作裝飾。
8)把牛油放入鍋肉燒熱,然後放龍蝦肉,煎香表面至5成熟左右取出。再加入牛油,隨後放入鹹蛋黃以細火煮,之後加入龍蝦肉及膏炒2分鐘。
9)把龍蝦頭及尾放於碟上,再把龍蝦肉放於龍蝦殼上,最後放上蕃茜作裝飾點綴。
Tips:
1) 選用新鮮的龍蝦是不須放尿。
2) 烚過龍蝦頭的水不要棄掉,可以留待之後煮粥或湯亦可。
3) 牛油要選擇無鹽的。
4) 咸蛋黃及牛油的味道已很重味,所以此道菜色無須額外加調味醬料味道已經很足夠。
Fried Lobster with Salted Egg Yolk
Ingredients:
1 lobster
Butter
1 salted egg yolk
Instructions:
1) Separate the head from the tail by twisting the two sections in opposite directions. Bring water to a rolling boil over high heat and add 2 tsp of salt. Place the lobster head in the pot and cook for 6 minutes.
2) To prepare the tail, either split it in half or, using a pair of kitchen scissors, snip down the length of the shell on either side of the legs on the underside of the lobster. Peel away the shell, then remove the digestive tract by cutting the tail in half lengthways and using a skewer or lobster pick to lift the vein out. Then put the meat in the boiled water to keep it fresh.
3) Take out the lobster head from the hot water and set aside.
4) Steam the salted egg yolk for 8 minutes. Once it is done, crush the salted egg yolk with a fork.
5) Scrape out the paste from the lobster head for later use.
6) Use kitchen paper to towel dry the lobster meat, pull the feet apart from the body and then cut into pieces.
7) Cut the shell and tail well for garnish.
8) Heat the pot with butter, put the lobster meat in and fry until half cooked. Then add butter in the pot and pan-fry the salted egg yolk over low heat. When bubbles appear, add lobster meat, and stir fry for 2 minutes.
8) Put the lobster head and tail on the plate, then put the lobster meat on the shell and finally garnish with coriander.
Tips:
1) If you choose the live lobster, no need to drain it of urine (the liquid is murky) and excess water.
2) Don’t discard the liquid of the cooked lobster head, suggest to keep it for cooking soup or congee
3) Use unsalted butter for better taste.
4) No need to use additional seasoning as the taste of the salted egg yolk and butter are good enough.
