Ingredients
Dry Ingredients:
• 2 cups (180g) rolled oats
• 1 teaspoon (1 tsp / 3g) ground cinnamon
• ¼ teaspoon (¼ tsp / 1g) ground nutmeg
• 1 teaspoon (1 tsp / 4g) baking powder
• ¼ teaspoon (¼ tsp / 1g) salt
• ½ cup (60g) chopped pecans or walnuts (optional)
• ¼ cup (40g) raisins or chopped dates (optional)
• • 2 tbsp (14g) ground flaxseeds (adds structure and fiber, optional)
Wet Ingredients:
• 1 cup (110g) grated apple (about 2 medium apples, skin on or off). Skin on for colour specs
• 2 large eggs
• 1 cup (240ml) milk (dairy or non-dairy)
• ¼ cup (60ml) maple syrup or honey
• 1 teaspoon (1 tsp / 5ml) vanilla extract
• 2 tablespoons (2 tbsp / 30ml) melted coconut oil or butter
• 2 tablespoons (2 tbsp / 30g) unsweetened applesauce (for added apple flavour and moisture)
Oven to 350°F (175°C). Line an 8x8-inch (20x20cm) baking dish used 9 ½ X 7 ½
Storage Tips
• Keep in the fridge in an airtight container for up to 5 days.
• Freeze wrapped bars for up to 3 months.
