🍗 BBQ / TANDOORI-STYLE WHOLE CHICKEN (COOK-ALONG GUIDE)
🛒 Ingredients
1 whole chicken
Thick yogurt (½ cup)
Ginger-garlic paste (2 tbsp)
Lemon juice (1 tbsp)
Kashmiri chili powder or paprika (2 tsp)
Turmeric (½ tsp)
Garam masala (1 tsp)
Salt (to taste)
Oil or melted butter (2 tbsp)
Optional but 🔥:
Smoked paprika
A few drops of liquid smoke
Butter for brushing
🔪 STEP 1: Prep the Chicken (VERY IMPORTANT)
Remove giblets if any
Wash and pat completely dry
Make deep cuts on:
Breast
Thighs
Drumsticks
👉 This lets flavor go inside
🥣 STEP 2: Make the Marinade
Mix in a bowl:
Yogurt
Ginger-garlic paste
Lemon juice
Chili powder
Turmeric
Garam masala
Salt
Oil
👉 Thick, red, spicy paste
🍗 STEP 3: Marinate
Rub marinade everywhere
Push marinade into the cuts
Cover and rest:
Minimum: 2 hours
Best: Overnight in fridge
🔥 STEP 4: Cook (Oven Method – Best at Home)
Oven Settings:
Preheat oven to 425°F (220°C)
Cooking:
Place chicken on wire rack (best) or baking tray
Roast 35 minutes
Flip chicken
Roast another 25–30 minutes
Brush with butter last 5 minutes for shine
👉 Internal temp: 165°F
🔥 STEP 5: BBQ Finish (Optional but AMAZING)
Switch oven to broil
Broil 3–5 minutes for charred edges
OR
Brush BBQ sauce and broil 2–3 minutes (fusion style)
🍽️ HOW TO SERVE
Slice like restaurant tandoori
Serve with:
Onion slices
Lemon wedges
Mint chutney or BBQ sauce
Goes GREAT with:
Rice
Naan
Mac & cheese (yes 😄)
