At Thanksgiving, what's your favorite part of the turkey? My favorite part is an unknown treasure, the turkey tail! In Hawaii, besides buying a whole turkey, you can conveniently pick up a tray of just the turkey tails anytime. So I'm not going to cook a whole turkey for you, but I will show you my mom's Thanksgiving turkey recipe in miniature by preparing a tray of these underappreciated treasures. On Thanksgiving, if you like, you can simply apply my recipe to the whole bird.
For the Thanksgiving turkey tails, you'll just need:
1 tray of Turkey Tails
Shaoxing Wine (紹興酒) - Chinese Rice Wine
Hawaiian Salt
Fresh Cracked Pepper
1 Stick of Butter
Besides Thanksgiving, in Hawaii, Char Siu Turkey Tails (叉燒火雞尾) are pretty popular. If you go to Disneyland, or to a renaissance fair, you pick up a turkey drumstick to munch on. But in Hawaii, you can just go to Chinatown and pick up Char Siu Turkey Tails anytime. But honestly they don't cook them nearly as well as my mom does. Let me show you how it's done.
For my Char Siu Turkey Tails, you'll need:
1 tray of Turkey Tails
2 cubes of Nam Yue (南乳) - Red Fermented Bean Curd
1/2 cup of Sugar (preferably brown sugar)
2 Tbsp. Hau Yau (蠔油) - Oyster Sauce
2 Tbsp. Hoisin Sauce (海鮮醬)
1/4 cup Soy Sauce (生抽)
1/4 cup Shaoxing Wine (紹興酒) - Chinese Rice Wine
1 Tbsp. Five Spice (五香粉)
