Seafood ceviche

Ingredients:
For the ceviche:
• octopus
• shrimp
• tuna
• olive oil
For the sauce:
• mango
• granadilla (passion fruit)
• jalapeño
• fresh ginger
• lemon juice
• soy sauce
Additional:
• red onion
• green onion
Instructions:
1. Prepare the octopus by separating the tentacles, then place them in a special bag and vacuum seal. Cook the octopus using the sous-vide method for 4 hours. After that, cut it into pieces.
2. Peel the shrimp and cut them into pieces about 2 cm thick.
3. Cut the tuna into cubes also about 2 cm thick.
4. Now, thread all the chopped seafood onto metal skewers for grilling. Before grilling, brush each skewer with olive oil. Grill the octopus for about 5-7 minutes. Grill the shrimp for 3-5 minutes. Grill the tuna for 2-3 minutes. Don’t forget to constantly turn the skewers to ensure even cooking.
5. Prepare the sauce: Cut the mango into pieces and place it in a blender, along with the pulp of the passion fruit, chopped jalapeño, peeled and chopped ginger root, lemon juice, and soy sauce. Blend until smooth, then strain the sauce through a sieve.
6. Remove the cooked seafood from the skewers onto a plate, sprinkle with chopped red and green onions, and drizzle with the spicy sauce.
