How To Make & Can Marinara Sauce From Fresh Tomatoes | Step by step tutorial | DELICIOUS!

In this Collins Country canning video I share how to make homemade marinara sauce from fresh tomatoes. After making many recipes that weren't good, I was shocked when this one actually worked! IT IS SO GOOD! Per usual, the video includes an easy and tp the point step by step tutorial for beginner canners. Good luck and happy canning season!
Ingredients:
-20 pounds tomatoes
-1medium onion Chopped
-1 Tbsp. Olive Oil
-1 Tbsp. Honey
-5 cloves garlic (minced)
-1tbsp salt
-pepper to taste
-2 tsp. dried basil (or 1/4 cup fresh chopped)
-2 tsp. dried parsley (or 1/4 cup fresh chopped)
-1 tsp. dried oregano (or 1 tbsp fresh Chopped)
-optional-rosemary, sage, thyme, bay leaf.
-Citric acid (1/4t for pints, 1/2t for quarts)
Directions:
-Blanch tomatoes in boiling water for 1 minute remove and place in ice water, remove skins. (You can skip this step if using food mill after tomatoes are cooked).
-Remove seeds then chop up tomatoes (only remove seeds if not using food mill).
-Place all ingredients into pot and simmer for 20 minutes
-Run through food mill if you didn't remove skins and seeds prior to cooking tomatoes. Or use food processor or immersion blender if skins and seeds were already removed.
-Simmer until it has reduced by 1/3 or until desired thickness (this can take 2-4 hours depending on how juicy the tomatoes are. Roma or Paste tomatoes have the least juice.
-Enjoy!
How to can it:
Add citric acid to jars (measurements above) I leave this out because I do not like the taste of citric acid in my tomato sauce products, but that is NOT usda approved. A lot of canners leave it out though and Italians do not add citric acid. I have left it out and had no issues. If you want to add it just add sugar to the recipe to help offset the sour acidic taste of the citric acid:)
-Pour marinara into sterile jars, wipe rims.
-Cover with sterile lids and bands.
-Waterbath = pints -35 minutes, Quarts -40 minutes
-Or pressure can = 15 minutes for both pints and quarts.
at 10 pounds pressure (adjust if over 1,000ft elevation)
-Done!
