🇲🇦🥞Moroccan Pancakes Recipe (Baghrir)🥞🇲🇦
Ingredients: 3 1/8 cups lukewarm water, 1 tbsp active yeast, 1 tsp sugar, 1 tsp salt, 2 tsp baking powder, 3/4 cup all purpose flour, 1.5 cups semolina flour, avocado oil spray, half stick butter with equal parts honey (roughly 8 tbsp of butter and 8 tbsp of honey).
Equipment: Blendtec Blender, crepe pan, extra long crepe spatula and additional flat wooden spatula.
Instructions: Pour lukewarm water into Blendtec followed by active yeast. Mix on batter for about 10-15 seconds (if using a regular blender, blend until fully combined). Then add sugar, salt, and baking powder to blender. Blend again for about 10-15 seconds. Then add all purpose flour and semolina flour. Blend again until the batter is completely smooth with no lumps. Cover and let sit for 10-15 minutes to let the active yeast work its magic. Then, on a griddle or crepe pan, spray with avocado oil, raise the heat to medium or medium high, then measure out 1/2 cup of the batter and pour it into 6 inch diameter pancakes. Wait and observe as bubbles begin to form. Do not flip the pancake! Once the batter is bubbly and has a uniform color on top, check the bottom by carefully lifting a small section without flipping the pancake. Once the bottom is a golden brown color, carefully remove the pancake bubbly side up with both of your spatulas and move it onto a plate. Repeat this process until all the batter is made. Then make your honey butter mixture by melting 1/2 stick of butter and combing it with equal parts honey. Place into a small dish in the middle of a cake stand or platter. Surround the topping with the Moroccan pancakes in an aesthetically pleasing way, as presentation is very important! Then serve your guests and enjoy by ladling out the topping, rolling up the pancakes and breaking them in two, eating them by hand!
