Chutney Palav is a flavorful rice dish made by cooking rice with a spicy, tangy chutney mixture.. It is often garnished with fried onions, cashews, and fresh herbs, making it a delicious one-pot meal.
Ingredients
Basmati rice – 2 cups
Baby potatoes -10
Green chillies – 6
Green peas – 1 cup
Garlic – 10
Ginger – 1 inch
Chopped coriander – ¼ cup
Mint leaves – ¼ cup
Saunf – 1 tsp
Mace – 1
Cashews – 15
Cloves – 4
Marata moggu -1
Cinnamon – 1 inch
Star anise - 1
Jeera – 1 tsp
Grated coconut – 1 cup
Bay leaf – 1
Turmeric – ½ tsp
Oil – 4 Tbsp
Salt – to taste
Procedure :
To prepare chutney add mint leaves, green chillies, grated coconut, garlic, ginger, coriander leaves and water to a mixer and grind well.
Add pealed baby potatoes and chutney to a bowl and mix well.
Add oil to the cooker and bring it to a boil. Then add jeera, clove, cinnamon, bay leaf, star anise, marata moggu, turmeric and fry. Add the chutney mixed baby potato mixture.
Add the soaked basmati rice , green peas and 4 cups of water. Add salt to taste . Close the cooker and cook until it whistles once.
Heat ghee in a pan and add cashews. Fry them until they turn light brown, then add this mixture to the palav. Your chutney palav is now ready to enjoy!
