Today we’re making the coziest fall breakfast ever — soft, golden, fluffy pumpkin pancakes with warm spices and that perfect autumn aroma 🍂✨
They’re completely gluten-free, sugar-free, and low carb, yet taste just like classic pancakes — light, tender, and melt-in-your-mouth good!
These pancakes are made with real pumpkin purée, coconut flour, and a touch of cinnamon. They’re packed with fiber and healthy fats, keeping you full and energized all morning without spiking your blood sugar. Perfect for anyone on their weight loss journey, following a keto, low carb, or diabetic-friendly lifestyle — or simply for those who want a healthy treat that feels like dessert but nourishes your body too.

📌 Ingredients (makes about 12 pancakes):
1 lb (450 g) cooked pumpkin or pumpkin purée
1 egg
¼ cup coconut flour (30 g)
1 tsp baking powder
½ tsp cinnamon
2 tbsp sweetener (I used xylitol, 30 g)
a few drops of vanilla extract
olive oil spray for frying
🥑 Macros (per 1 pancake, out of 12):
40 kcal · 1.3 g protein · 1.2 g fat · 3 g net carbs
👩🍳 Cooking Instructions:
1️⃣ Cut pumpkin into chunks, remove seeds, and cook in water for about 15 minutes until soft.
2️⃣ Measure 1 lb (450 g) of cooked pumpkin and blend with 1 egg until smooth.
3️⃣ Add ¼ cup coconut flour (30 g), 1 tsp baking powder, ½ tsp cinnamon, 2 tbsp sweetener (30 g), and a few drops of vanilla extract. Mix well.
4️⃣ Heat a non-stick pan on low heat and lightly spray with olive oil.
5️⃣ Scoop small portions of the batter with two spoons, flatten gently with a wet spoon, and cook for 3 minutes on each side until golden.
6️⃣ Serve warm with sugar-free maple syrup or Greek yogurt and enjoy! 🍯✨
