These idlis are a lifesaver for busy mornings or unexpected guests. Pair them with coconut chutney or sambar for the ultimate South Indian breakfast experience.
🛒 Ingredients:
• 1 cup Sooji (Rava/Semolina)
• ¾ cup Thick Curd (Yogurt)
• ½ cup Water (adjust for consistency)
• 1 tsp Eno or Fruit Salt (or ½ tsp Baking Soda)
• Salt to taste
• For the Tadka: 1 tbsp Oil, 1 tsp Mustard Seeds, 1 tsp Urad Dal, Curry Leaves, and a pinch of Hing.
👩🍳 Quick Steps:
1. Roast: Lightly roast the sooji (if not pre-roasted) and prepare the tempering (tadka).
2. Mix: Combine sooji, curd, salt, and the tadka. Add water to make a medium-thick batter.
3. Rest: Let it sit for 15 minutes so the sooji absorbs the moisture.
4. Steam: Add Eno just before steaming. Pour into greased molds and steam for 10–12 minutes on medium heat.
5. Serve: Let them cool for 2 minutes before scooping out!
