Sitaphal Rabdi
Ingredients:
( Custard Apple ) Sitaphal: 2 nos
Full Fat Milk : 2 lit
Sugar : 1/4th cup
Cardamom Powder : 1/4th tsp
For garnish
Sliced Almonds : 1 tbsp
Sliced Pista : 1 tbsp
Silver Vark for decoration
Method :
1. Take a thick bottom vessel
2. Add 2 litre milk and start boiling
3. Let it boil nicely keep stirring occasionally
4. Mean while seperate the seeds from the pulp and keep it aside
5. In a mixer jar take the pulp 2 tbsp and grind it nicely into a paste keep it aside
6. Keep boiling the milk on low flame
Let it thicken keep seperating the malai that comes on top of the milk
7. Add sugar and cardamom powder and mix well keep stirring
8. You will see milk has changed its colour and started to become thick
9. This process will take 1 to 2 hours
10. Once the milk has reduced almost half and become thick add sitaphal pulp paste and stir nicely
11. Simmer on low flame for 10 min and close the flame
12. Your Rabdi is ready
13. Let it cool completely and then add sitaphal pulp to it and mix it Nicely
14. Garnish it with sliced Almonds and Pistas
15. Refrigerate it and serve chilled
