奶凍4重奏 Milk Pudding 4 flavors
材料:
1. 全脂鮮奶380ml
2. 魚膠粉7g (約1湯匙)
3. 練奶約1-4湯匙 (個人口味而定)
4. 藍莓蓉/楓糖漿/蜜糖/咖啡液
步驟:
1. 將100 ml 鮮奶倒入煲小火加熱至60-70 ℃,並加入練奶拌勻。
2. 另一容器,將魚膠粉加入100 ml 鮮奶拌勻,然後倒入已加熱鮮奶輕輕攪拌煮熔。
3. 離火,倒入餘下的180 ml凍鮮奶拌勻。
4. 將混合液倒入奶瓶,(有需要可過篩1次),用匙羹去除氣泡。
5. 用保鮮紙蓋好,用牙籤/叉刺幾個小孔,放雪櫃冷藏四小時或至凝固即可。
6. 加上藍莓蓉/楓糖漿/蜜糖/咖啡液 便完成。
Ingredients :
1. 380ml full cream milk
2. 7g gelatin (about 1 tbsp)
3. About 1-4 tbsps of condensed milk (depends on your own preference)
4. Blueberry puree/maple syrup/honey/fresh brewed espresso
Steps:
1. Pour 100 ml of fresh milk into a pot and heat to about 60-70 ℃. Add in the condensed milk. Mix it well.
2. In another container, add gelatin powder to 100 ml fresh milk, mix well, then pour into the heated milk, and stir gently until all the gelatin powder dissolve.
3. Remove it from heat, pour in the remaining 180ml of milk and mix well.
4. Pour the mixture into containers, (you can sieve
5. it once if necessary), remove the bubbles with a spoon.
6. Cover with plastic wrap, prick a few small holes with a toothpick/fork, and refrigerate at least four hours or until it becomes solids.
7. Add blueberry puree/maple/syrup/honey/ fresh brewed espresso to finish.
