Sweet and Sour Chicken
3 lbs chicken tenders tendons taken out
Chicken marinade
1/4 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar 1/8 teaspoon of ground cumin, 1/4 of egg white, 1 tsp of soy sauce and mix marinade and pour into chicken tenders
Dipping mixture
1 and 1/2 cup of flour
1/3 cup and two tablespoon of corn starch
2 tsp of baking powder
1/4 tsp of salt
1/4 tsp of sugar
1/2 tsp of artificial chicken powder
Sweet and sour sauce
2 cups water
1/2 tsp salt
1 tsp of lemon juice
4 tablespoons of sugar
2 tablespoons of ketchup
1 and 1/2 tablespoon of diluted red vinegar
1/4 tsp artificial chicken broth
1 tablespoon of oyster sauce
Fill wok with 1.5 quart of canola oil at high heat
To see if oil is ready for cooking you can test it with dipping flour in oil and if it floats then it is ready to be used
Then mix half chicken with flour and dip into hot oil and turn to medium heat. Chicken is ready when it if firm to touch with chopsticks
Stir to make sure chicken does not stick together
*Chef tip: when pouring chicken in hot oil, pour from the side of the wok and not from the center to avoid splatter and burn
*Chef tip: bend both outer tines of fork into right angle and Innermost tines inward to help with dipping chicken with flour

1/4 cup of onion
1/4 cup tomato
1/4 cup yellow pepper
1/4 cup of green pepper
Cooking the sauce
Pour in the sweet and sour sauce to hot wok
Add sugar to sweet and red vinegar to make it more sour
All done!
