Honey Garlic Glazed Salmon with BBQ Squash & Mushrooms Recipe:
For the Salmon:
4 (6 oz.) salmon fillets
½ tsp. kosher salt
½ tsp. kosher pepper
½ tsp. smoked paprika
¼ tsp. blackening seasoning (creole)
Sauce:
3 T. butter
2 tsp. olive oil
6 cloves garlic
½ cup honey
3 T. water
3 T. soy sauce
1 T. sriracha sauce
2 T. lemon juice
Instructions:
Pat salmon dry, then season with all the seasonings.
Add butter and oil to a large oven safe skillet (I use my cast iron skillet) over MED-HIGH heat. Once butter is melted, add garlic, water soy sauce, sriracha, honey and lemon juice and cook 30 seconds or so, until sauce is heated thru.
Add salmon, skin side down and cook 3 minutes. While salmon cooks, baste frequently with sauce from the pan by spooning it over the top of the salmon.
Broil salmon for 5-6 minutes, basting with sauce once during the broil, until salmon is caramelized and cooked to desired doneness.
Garnish with minced parsley if desired.
BBQ Vegetables:
Summer squash
Zucchini
Onions
Mushrooms
Herbed garlic seasoning
Salt and Pepper
Olive oil
Slice uniformly on the diagonal 2 summer squash and 2 zucchini. Slice ½ of large onion into half slices. Clean and slice desired amount of fresh mushrooms. Combine in a large bowl with olive oil using your hands to mix thoroughly so that all of the vegetables have been covered with oil. Add seasonings to the mix and combine thoroughly again.
Using a bbq basket or skillet with holes, place on the BBQ on 400 degrees and stir frequently until vegetables have been cooked to crisp tender and slightly browned. This method will caramelize your veggies into a whole new veggie experience that is unforgettable. Serve with cooked rice. Enjoy!
