Ingredients for Chicken Cholay/Murgh Cholay/مرغ جھولے
-1 1/2 cup uncooked chickpeas/garbanzo beans/کابلی چنے/چھولے (yields ~4 cups after cooking them next day)
-1 cup aquafaba (Aquafaba is the liquid from cooked beans, especially chickpeas)
-1 1/2 tsp salt or to taste
-1 1/4 tsp red chili powder or to taste
-1/2 tsp red chili flakes
-2 tbsp coriander powder
-1/2 tsp turmeric powder
-1 1/2 tsp cumin powder
-1 tsp black pepper powder
-1 1/2 tsp paprika powder
-1/4 tsp small cardamom powder
-2/3 cup vegetable oil
-2 tbsp of my homemade clarified butter (ghee)
-1 medium-sized yellow onion, finely chopped
-two ~2" cinnamon sticks
-two star anise (badian kay phool)
-1 tbsp garlic paste
-1 tbsp ginger paste
-2 tbsp of my homemade tomato paste
-1/4 cup water
-2 lb cut pieces of whole chicken (skinless)
-1 cup aquafaba ( reserved liquid of cooked chickpeas)
-1 tsp garam masala powder
-2 tbsp freshly chopped cilantro
-some freshly chopped cilantro and jalapeño for garnishing

Uses of Aquafaba:
It’s amazing how something often thrown away can turn out to be so useful!
Aquafaba, the liquid found in cans of chickpeas (or the cooking water from other beans), is surprisingly versatile! Here are some interesting uses for it:
1-Vegan Egg Substitute: Replace eggs in recipes for meringues, macarons, and mousses. Three tablespoons of aquafaba roughly equal one egg.
2-Mayonnaise: Whip it up with oil, vinegar, and mustard for vegan mayo.
3-Whipped Cream: Beat it with sugar and a bit of cream of tartar to make fluffy, vegan whipped cream.
4-Butter Substitute: Mix it with oil and blend to create a dairy-free butter alternative.
5-Baking: Use it to make vegan cakes, brownies, and cookies moister and fluffier.
6-Cocktails: Shake it up with your favorite ingredients to make frothy vegan cocktails.
7-Binding Agent: Incorporate it into veggie burgers or falafel to help bind the ingredients together.
8-Thickening Agent: Aquafaba works wonderfully as a thickening agent in cooking. Here are a few ways to use it for this purpose:
· Soups and Stews: Stir a few tablespoons of aquafaba into your soup or stew to give it a thicker, creamier texture.
· Sauces and Gravies: Incorporate aquafaba into your sauces and gravies for added body and richness. Whisk it in slowly to avoid lumps.
· Puddings and Custards: Aquafaba can help thicken vegan puddings and custards, giving them a smooth and creamy consistency.
· Batter: For a thicker batter, such as for pancakes or fritters, add some aquafaba to the mixture.
· Dips and Dressings: Blend aquafaba into dips and dressings to give them a thicker, creamier texture without the need for additional oils or fats.
