Conjugating Japanese い-Adjectives: Easy Guide for Beginners
I-Adjectives have two functions: (1) they can be predicates, and (2) they can modify nouns.
In English, adjectives don’t need to be conjugated. You just change the form of the verb 'be' according to the tense and subject. In Japanese, however, i-adjectives must change their endings, and the copula like です(desu) is also conjugated.
In Japanese textbooks, learners usually start with the polite form. As you may have noticed, the polite form has two negative versions. Most beginner textbooks teach おいしくないです(oishikunai desu) and おいしくなかったです(oishikunakatta desu) first. However, to native Japanese speakers, these are not fully correct polite forms.
The proper polite forms are おいしくありません(oishiku arimasen) and おいしくありませんでした(oishiku arimasen deshita).
Oishikunai desu is basically the casual negative form oishikunai plus the copula desu.
Since です(desu) is polite but おいしくない(oishikunai) is casual, this form feels somewhat informal or grammatically inconsistent.
