Cha Cha Dave: 2000 Year Old Bread
• No Knead Bread
• Crunchy Crust-Chewy Inside
• You will need:
• 3 Cups White Flour
• 1/2 Cup Oat Meal - For Dusting
• 1/4 Cup Cracked Wheat - For Dusting (Optional)
• 1 Tea Spoon Yeast
• 1 Pinch Salt
• 1-3/4 Cups Water
• 1 Large bowl
• 1 Dutch oven or cast iron pan with lid.
• Preparation:
• Put flour, yeast, salt into bowl. Stir to mix. Add water and mix together to moisten dry ingredients. Do not over mix. Lumps are fine.
• Cover bowl with plastic wrap and let rest for 18 - 24 hours room temperature.
• Put Dutch oven in the oven with top.
• Preheat oven to 500 Degrees. Dutch oven should steaming hot.
• Put oat meal and cracked wheat on cutting board surface..spread around.
• Pull dough out of bowl and pour onto oat meal and cracked wheat. (It will be stringy. Fold over (in half) and then again and roll into oat meal and cracked wheat to coat on all sides.
• When oven reaches 500 degrees, open door and with a pot holder take off lid. Take dough and drop into dutch oven and place cover on. Bake for 35 minutes. If darker crust is desired, take off cover and leave in oven additional 8 to 10 minutes longer.
• Cool on wire rack. Slice and enjoy!
• Bread will last 5 to 6 days @ room temperature in a plastic bag.
