Today we’re making a delicious Red Thai Sweet Potato Curry with Rice – quick, healthy, and full of flavor! 🥥🍠
This curry is made with red Thai curry paste, coconut milk, sweet potatoes, bell peppers, and spinach, served with fluffy long-grain rice.
It can be enjoyed vegetarian, or fully vegan if you replace the fish sauce with soy sauce. 🌱

📌 Ingredients (4 servings)
For the curry:
1 tbsp coconut oil
2 shallots (or onions), finely diced
2 sweet potatoes (about 650 g), peeled & cut into 2 cm cubes
1 red bell pepper, cut into 2 cm cubes
4 tbsp red Thai curry paste
1 can coconut milk (400 ml)
250 ml vegetable or chicken broth
100 g spinach (fresh or frozen)
1 tsp fish sauce (or 1 tbsp soy sauce/tamari for the vegan version)
1 tbsp fresh lime juice
For the rice:
250 g long-grain rice
500 ml water
½ tsp salt
Optional garnish:
Fresh cilantro leaves
Roasted, unsalted peanuts
📌 Instructions
Dice the shallots and bell pepper. Squeeze the lime. Peel and cube the sweet potatoes.
Heat coconut oil in a pan, sauté the shallots until translucent. Add sweet potato cubes and fry for about 5 minutes.
Stir in the curry paste and roast for 2 minutes. Deglaze with broth, add coconut milk and a splash of water from rinsing the can. Stir well and let simmer over medium heat.
Meanwhile, cook the rice: place a pot on the stove, add water and salt, then add rice. Bring to a boil, reduce heat, and let it cook until the water is almost absorbed. When small holes appear in the rice, turn off the heat, cover with a lid, and let steam until done.
Add the bell pepper to the curry and let it cook briefly. Stir occasionally to prevent sticking.
Shortly before serving, stir in the spinach and let it wilt. Add lime juice and fish sauce (or soy sauce for vegan) to taste.
Fluff the rice with a fork before serving. Serve the curry with rice and garnish with cilantro and peanuts if desired.
