Quick & Easy Mint Syrup Recipe for Cocktails Part 1 - The Making

Here's an easy mint syrup recipe great for use in Mint Juleps, Queen's Park Swizzles, and Kentucky Maid cocktails. You can also use it to create a fun Daiquiri riff or Mojito.
We use two different methods to create this mint syrup. The first is the most straightforward: add a bottle of Liber & Co. Classic Gum Syrup (or simple syrup) and 40 mint leaves to a blender, blend till smooth, and strain back into the bottle with a fine strainer.
The second is a bit more involved, incorporating a blanching technique. Using the same amount of syrup and mint leaves as above, we first blanch the mint in boiling water for 15 seconds, and then immediately place it in a cold ice bath until the leaves are cooled. Afterwords you blend the leaves and syrup and strain.
This is Part 1 of a 2 part series. The second episode will look at which method is superior in terms of taste and appearance after 1 week in the fridge.
