Like Mushroom Speedway, Country Speedway gets its own theme in the the Greatest Hits print of this game.
In the Time Attack challenge, Spyro must:
Pass through 8 red Rings
Wreck 8 Tractors
Cook 8 Cows
Destroy 8 Planes
Then the Racing challenge has you race against several bi-planes. In addition to the speed-boosting blue stars, there are also red stars with rockets in them. Spyro can grab these rockets with his mouth, then shoot them at other races to slow them down and keep them from using the blue stars for a few seconds.

Afterwards, this Speedway level has its own Hunter challenge where the Cheetah dons a jetpack to shoot down sheep U.F.O.s and space cows. You have to take them all out before they do anything with the farmers, and be careful not to shoot the farmers, too!
Do all 3 of these challenges to get an Egg for each of them!
