Rosemary Chicken - a beautiful "fancy", yet easy dish

Another “company dish” as I like to call it. It’s tasty and fancy, however the ingredients are simple and nutritious. It’s a fan favorite in my restaurant!
The dish is dairy free, gluten free, and freezes well for double duty.

Rosemary Chicken
Serves 6
Ingredients
• 1/3 c oil
• ¼ c lemon juice
• ½ c capers, drained
• 3 T minced garlic
• 3 T fresh rosemary leaves
• 2 tsp salt
• 1 tsp black pepper
• 6 bone in thighs
• 2 lemons, sliced
Directions
Preheat oven to 450°. Stir together first 7 ingredients in a medium bowl.
Sprinkle chicken with additional salt & pepper. Lay in baking pan skin side up. Cook 30 minutes until chicken is browned.
Lay a lemon slice on each thigh. Pour lemon mixture over chicken.
Bake 20 minutes until. Cover with foil if getting too dark.
PREP AHEAD STEPS:
Thaw chicken. Label – Rosemary 1
Mix oil through pepper. Label – Rosemary 2
Slice lemon. Label - Rosemary 3
