This pineapple gum syrup is from the Tropical Standard book and if you've never made or had a gum syrup before they provide a couple of unique benefits. First, they can provide more texture and body to a drink without having to make an overly sweet syrup. Second, they help stabilize foams. Gum Syrups have been around forever, and are easy to make as long as you have some acacia gum and a blender.
